Cabernet Sauvignon

Winemaking is a journey, and Watchful Maker is all about how winemakers must tirelessly pursue quality. It takes deliberate moves and continuous dedication to make a great wine. The grapes for this wine were harvested at just the right time to create a slightly reserved, “Old World” style Cabernet. The flavor profile is a little more structured and less openly fruity than most California reds. We love the mix of dark fruits and the light herbal notes that play off the finish. The complexity of this wine opens up over time and is really fantastic with a meal. Try pairing it with earthy dishes: beef bourguignon, mushroom risotto, or a hearty soup. Judges love it too! It took home a Silver medal from the 2018 Harvest Challenge.

California

California is one of the most diverse winegrowing regions in the world. Spanning 850 miles along North America's west coast—and inland across mountains and valleys—California's American Viticultural Areas (AVAs) cover a dizzying array of terroir. The cold, deep waters of the Pacific Ocean play a major role in cooling California's vineyards, sending fog and chilly air up to 100 miles inland. This tempers the daytime heat and allows grapes to ripen slowly but fully. Cooler-climate grape varieties thrive closest to the sea, while further inland, bigger, bolder wines prevail.
