About This Wine

Ultima

Cabernet Sauvignon

With our Ultima wines we don’t mess around. The Ultima brand represents rare, carefully-crafted wines made with grapes from some of the finest vineyards worldwide. Often working alongside internationally renowned winemakers, we develop the wines using processes specific to the grapes; methodically extracting depth and flavor from the fruit. While everything about the wines, including grape varietal and region, might be different bottle to bottle, they all have one thing in common: once these incredible wines are gone, you won’t be able to get them again.

Sourced entirely from vineyards in Chile’s Central Valley and Colchagua Valley regions, both renowned for their smoky and flavorful Cabernet, the grapes used in the 2015 Gran Reserva were carefully selected to maximize depth of flavor while delicately balancing good structure and acidity. We cold-soaked the juice for eight days prior to fermentation, which enhanced its body, structure, and color; giving the wine a deep purple hue and dense texture. After fermentation, we placed the wine in new French oak for 12 months, allowing its flavors time to deepen and densely concentrate.

The result of this careful selection and development is an awesome and extremely drinkable wine. In the mouth, berry fruits are accented by tangy flavors of black cherries and cassis. Following this, notes of blueberries and chocolate lead to a powerful and unforgettable finish.

Wine Region

Valle Central

The expansive, warm flatlands of Chile's Valle Central are home to most of the country's vineyards. This long stretch of land from Santiago to Itata Valley is divided into four sub-regions, each with its own climate and reputation. There is Maipo Valley with its minty Cabernet Sauvignon, Rapel Valley with its spicy Carménère and the Curicó and Maule Valleys, famous for concentrated Carignan made from old vines. Throughout the valley—which is prized for its rich, volcanic soils—the hot days and cool nights result in ripe, well-balanced grapes. Some of the most common Valle Central wines are fruit-forward reds made from plummy Merlot and pear-flavored whites crafted from Chardonnay.
