About This Wine

Trimble Hawke

Cabernet Sauvignon

This exceptional wine is part of our Fine Wine Collection.

Winemaking Our Cabernet comes from sustainable vineyards, and this respect for one’s surroundings continues in the winery. Each winemaking decision is guided by the intent to honor the grape’s varietal character and highlight a beloved regional style. After harvest and sorting, fermentation lasts eight days in stainless steel tanks at warm temperatures to extract flavor and texture before oak shapes the final profile of a classic Dry Creek Cabernet.

Vintage Dry Creek Valley’s 2022 vintage is characterized by quality over quantity and stands as one of the region’s driest seasons in recent history. Spring frosts and autumn heat waves reduced yields across the valley. These events, combined with dry weather and quick-draining Manzanita soils, meant vines directed all their energy to a small number of grape clusters. Though it was a modest harvest, this extra attention led to an exceptional payoff—a wine with outstanding flavor concentration and complexity.

Pairing Logic If you are searching for the perfect wine for your special dinner, this is it. This Cabernet is full of flavor, with excellent, food-friendly tannins. The best pairings will accentuate its fruit, play into its herbal aromas and complement its bold structure. Treat yourself to fine cuts of red meat for this wine’s powerful tannins to tenderize. Aim for big flavors with vegetarian dishes featuring earthy root vegetables and starchy carbohydrates. Season with rosemary and thyme to play into the wine’s aromas, or incorporate them into salty sauces and marinades.

Wine Region

Dry Creek Valley

Dry Creek Valley AVA is located around 70 miles north of San Francisco, in the heart of Sonoma County. This small region may only be two miles wide, but it's a treasure trove of diversity thanks to its varied landscape and complex geological history. Flanked by rivers and lakes, the region's vineyards stretch from sun-soaked hillsides to cool valley floors. Its deep, gravelly soils are the perfect home for California's favorite red grape varieties, particularly Zinfandel, Cabernet Sauvignon and Merlot, while Sauvignon Blanc thrives in cooler sites.
