To make the Thicket 2016 Shiraz Australian winemaking expert Peter Leske joined forces with two Masters of Wine: Giles Cooke and Fergal Tynan (there are only 356 in the world). Their desire was to produce a straightforward take on a classic Aussie wine style. Harvested at night when the temperatures are cooler, and then aged for nine months in French Oak barrels the Shiraz has a solid structure, silky mouthfeel, and an excellent balance between tannins and fruit. The light touches of smoke and cocoa from the oak barrels allows this Shiraz to pair as easily with dessert as it can with a steak. This is a wine, made by masters, that you might never get a chance to try again.

Winemakers
Winemaking for this bottle was overseen by the superstar team of Peter Leske, Giles Cooke MW, and Fergal Tynan MW. Between them, they have decades of wine industry experience, two Masters of Wine certifications, and have crafted dozens of incredible wines. The team is famous for ensuring that every wine adheres to strict winemaking traditions that allow for exemplary varietal definition. Their wines are often characterized as having a vibrancy that showcases the terroir of wherever they work.

Region
South Eastern Australia is home to the largest concentration of the country's vineyards. The warm days and cool nights are closer to the weather in Napa than in the nearby Outback. Weather patterns work in harmony with nutrient rich soils to produce grapes excellent for making jammy, full-bodied wines. As varied and unique as the people who make them, Australian wines are diverse and just waiting to be explored.

Tasting notes
Juicy and sweet on the palate, it highlights notes of blackberry and bramble alongside caramel and cocoa from the oak aging. This makes for a delightful pairing with fragrant, savory dishes like seared duck and beef bolognese. It can also be the perfect counterbalance to the acidity of tomato-based sauces and soups.
