About This Wine

Te Pasáis

Sauvignon Blanc

This exceptional wine is part of our Fine Wine Collection.

Winemaking These Sauvignon Blanc grapes are harvested by hand, meaning crews can inspect for quality as they go, leading to less sorting needed at the winery. Fermentation occurs at cool temperatures in stainless steel tanks to preserve natural aromatics. After fermentation, the wine is stirred to allow its naturally occurring sediment, “lees,” to add satisfying softness and fullness to the mouthfeel before it is filtered and bottled.

Vintage The 2023 growing season was a roller coaster for Chilean vineyards, as frost, extreme heat and summer storms took turns testing local winemakers’ resilience and adaptability. In the Curicó Valley, conditions were hot and dry. Rocky loam soils retained warmth from the sun, enhancing Sauvignon Blanc’s ripe fruit characteristics. These 30-year-old vines aren’t afraid of drought, with deep, well-established root systems to access water and nutrients. The result is a wine that flaunts both flavor and freshness.

Pairing Logic This Sauvignon Blanc’s fresh fruit notes, oak-driven characteristics, and lively acidity make it an excellent culinary companion. Juicy white meat and fish will emphasize the wine’s body and fruit, especially with salty seasonings and marinades. Its crisp acidity and minerality will slice through creamy sauces or oils from fried foods, creating a refreshing sensation on the palate. Vegetarian dishes are also an excellent option, particularly those with tangy marinades or caramelized elements that play into the wine’s vanilla and honey notes.

Wine Region

Curicó Valley

Nestled in the heart of Chile's Central Valley, the Curicó Valley is a wine lover's dream and a viticultural gem. This sub-region is home to numerous microclimates and soil types, allowing it to host 30 different grape varieties—more than any other region in Chile. Vineyards on the eastern side experience cool temperatures from the Andes Mountains, while most of the valley enjoys a warm Mediterranean climate. It has two subregions, Teno in the north and Lontue in the south and is best known for dark-fruited Cabernet Sauvignon, spicy Syrah, and fruit-driven styles of Sauvignon Blanc and Chardonnay.
