Cabernet Sauvignon

With a long history of winemaking, Simi has a lot to live up to. This blend takes many of the best red grapes in California. This 2018 wine is 87% Cabernet Sauvignon, 8% Merlot, 3% Petite Sirah, 1% Cabernet Franc, and 1% Merlot. All but the Petite Sirah grapes are included in the Red wine blends of Bordeaux. Petite Sirah is also a French grape, not Bordeaux, and never was widely planted in France but has found a home in California. The resulting wine is dark in color and deep in flavor. We love it with dinner or a light bite for dessert.

Its many sub-regions produce a broad range of styles: from the bold Cabernets of Alexander Valley to the fragrant Pinots of Sonoma Coast and the sublime Chardonnays of Chalk Hill.

Aromas of cassis, black plum, and ripe Bing cherry, with a touch of toasty oak. Complex notes of cocoa, cassis, pepper, and cedar. Black fruit dominates the entry, followed by plum and black cherry with a spicy, lifted mid-palate. A bit of peppery cassis leads the finish with some roasted coffee notes and supple yet firm tannins.
