Cabernet Sauvignon

In comparison to the surrounding area, Washington's Columbia Valley offers a different climatic world. With this 2017 Cabernet Sauvignon, our winemakers at Saturn's Rings bring this unique terroir to light by crafting a wine filled with exceptionally ripe fruit flavors and substantial sweetness. Like our Solar System, winegrowing conditions in this arid AVA revolve around the sun. Its high latitude allows for more daylight hours than the more southerly Cabernet powerhouse of California, meaning that these Washington vineyards receive minimal solar relief; the sun bathes the region with its powerful rays, providing the necessary light and heat for photosynthesis. The leaves absorb sunlight and convert it into oxygen — for our own planet's atmosphere — and glucose, which the ripening grapes appropriate. These Cabernet Sauvignon grapes were picked at plump ripeness, and careful winemaking preserved their spectrum of dark fruit flavors. Sheltered by the rain shadow of the Cascade Mountains, Columbia Valley is home to the majority of Washington's vineyards. Cool nights keep zippy acidity in the grapes, while long daylight hours give the fruit plenty of chance to ripen. This results in full-bodied Merlot, elegant Cabernet Sauvignon and deeply concentrated Syrah. White wines are just as tantalizing, with toasty oak-touched Chardonnay and ripe stone fruit-flavored Riesling taking the spotlight. Sub-AVAs to look out for are Yakima Valley and Walla Walla. The Columbia Valley is one of the only appellations in the United States to occupy vineyards in two states, as it crosses the Oregon border in the southern part of the valley.
