One could argue that Malbec and Argentina are synonymous. However, in recent years, Argentina winemakers have become captivated by Bordeaux-style wines and have significantly increased their production of Cabernet Sauvignon. The high-elevation vineyard sites in Mendoza are perfect for varietals that thrive in continental climates. At the altitude of most vineyard locations, days are dry and hot. The steep temperatures are mitigated by cool winds that blow off of the nearby Andes Mountains which creates a diurnal shift. This change in temperature famously creates concentrated flavors and promotes natural tannin and acidity. The result of these growing sites is nuanced and deeply concentrated Cabernet Sauvignon that has an intriguing flavor profile unlike its brothers and sisters in Bordeaux or California.
