With each sip, our 2018 Cellar Select Cabernet Sauvignon from Pip and Plow offers a taste of the Old World crafted from New World grapes from the vineyards of Columbia Valley in Washington state. Much like the famed vineyards of Bordeaux, which lie on the banks of the Garonne and Dordogne rivers, the Columbia Valley AVA encompasses the valleys of the Columbia River and its tributaries. These wine-producing regions benefit from similar climatic influences such as a rain shadow effect and a large diurnal range. This results in comparable, austere styles with a lighter body, refreshing acidity, and fruit flavors that are secondary to herbaceous elements and oak. In this case, a shared focus on terroir and winemaking practices emphasize these characteristics. With this Cellar Select Cabernet Sauvignon, our winemakers at Pip and Plow have crafted a delicious nod to the hard work and tradition of Old World wines, and at the same time have demonstrated the boundless potential of New World vineyards. Columbia Valley

Sheltered by the rain shadow of the Cascade Mountains, Columbia Valley is home to the majority of Washington's vineyards. Cool nights keep zippy acidity in the grapes, while long daylight hours give the fruit plenty of chance to ripen. This results in full-bodied Merlot, elegant Cabernet Sauvignon and deeply concentrated Syrah. White wines are just as tantalizing, with toasty oak-touched Chardonnay and ripe stone fruit-flavored Riesling taking the spotlight. Sub-AVAs to look out for are Yakima Valley and Walla Walla. The Columbia Valley is one of the only appellations in the United States to occupy vineyards in two states, as it crosses the Oregon border in the southern part of the valley.
