Winemaking After careful selection at harvest, we sort through our Tempranillo grapes a second time when
they arrive at the winery to ensure we get the best expression of the year. We pursue youth and freshness throughout our winemaking process, encouraging this native variety’s fruit-forward character and earthiness to reveal itself. Oak aging takes place in traditional oak barriques. This size barrel allows for the perfect amount of interaction with oxygen before the wine enters the bottle, and we proudly secure the cork on an impeccable vintage.

Vintage Storm Filomena presented a record-breaking kick-off to Spain’s 2021 vintage. In La Mancha, our desert-like landscape transformed into a sea of white, blanketed by the highest snowfall in over a century. The following spring brought rainstorms and frost, reducing yields before summer signaled the return of dry weather. Our 60-year-old Tempranillo vines enjoyed gorgeous sunny days nourished by winter’s water reserves deep in the soil. We harvested in late August, collecting plump grape clusters by hand, eager to sample the riches of an unforgettable year.

Pairing Logic This Tempranillo has all the features of an excellent food wine. Its uplifting aromas, fresh fruit flavors and supportive tannins make it a superb match to herbal seasonings and sauces served with lean red meat or tender cuts of pork. Vegetarian dishes should feature earthy vegetables and legumes with salt and olive oil to emphasize the wine’s body and ripe berry flavors. Seasonings with mint and white pepper will match its aromas and create a harmonious pairing experience.
