Sauvignon Blanc
With just one taste of our Ophidian Sauvignon Blanc, you will understand how South African wine is quickly carving out its place on the map and finding its way into your wine cellar. Thanks to an agreeable climate and thoughtful winemaking, this “wyn” brings together delicious characteristics from cool and warm-climate styles. Vineyards found on South Africa’s Western Cape have largely been converted from old apple orchards. The climate here is warm and sunny, which means grapes have no trouble tapping into a juicy assortment of tropical fruit flavors. Cool breezes from the Atlantic and Indian oceans mediate temperatures and help to conserve refreshing acidity. These grapes were harvested twice, each time at a varying stage of ripeness. Grapes in the first harvest were intentionally picked when underripe to bring freshness and acidity to the final blend. The later harvest focused on gathering grapes at peak ripeness to capture exotic flavors of tropical fruit.
