While Nomos may represent all things anarchistic, our Cabernet Sauvignon is exceptionally balanced and approachable. A stable tannic structure and moderate acidity support notes of red and dark fruit. Why then, you ask, does this Cabernet come from such a rebellious brand? The answer lies in the region in which it was cultivated. Winemaking is one of the most tightly regulated industries. Regional laws often dictate the use of certain grape varieties, winemaking techniques, and aging requirements. In an industry governed by rules and tradition, South Australia chooses to nurture creativity and innovation. As with many New World regions, Australia has embraced a more “hands off” approach to wine law. From juicy, full-bodied Shiraz and bold Rhône-style blends to deliciously buttery, oak-touched Chardonnay and surprisingly elegant Rieslings, South Australia is renowned for its wide array of crowd-pleasing wines. The key is the state's diverse geography and climate. With hot, dry regions like Riverland and cool, coastal areas like the Adelaide Hills, winemakers have an incredible range of grapes and styles at their disposal. South Australia is responsible for more than half of Australia's total wine production and makes some of the country's most prominent wine labels. It is also home to world-famous regions like Barossa Valley, McLaren Vale and Clare Valley.
