Winemaking For aromatic grape varieties like Sauvignon Blanc, a swift machine harvest proved crucial to avoid 2022’s autumn heat waves. After careful sorting and pressing, fermentation takes place in stainless steel tanks at cool temperatures to preserve the wine’s natural freshness and varietal character. Each sip reflects this meticulous attention to detail, showcasing a delightful harmony between winemaker, varietal and terroir.

Vintage Our wine’s plump and juicy character results from a warm growing season in Paso Robles vineyards. After a dry winter and frosty spring reduced crop sizes, the grapes enjoyed a peaceful summer. Autumn introduced several heat waves that accelerated ripening. To beat the heat, white grapes were harvested in early August before the hottest spikes in September. These conditions created beautifully ripe flavors while allowing Sauvignon Blanc to maintain its naturally crisp acidity.

Pairing Logic Our Sauvignon Blanc has the flavor concentration and freshness to bring a variety of cuisines to the next level. It will pair especially well with seafood, tender white meat, fried fare (including vegetables) and tangy Asian-inspired dishes. California's fastest-growing wine region is quickly gaining an international reputation for its innovative and boundary-breaking wines. Located halfway between LA and San Francisco, the Paso Robles AVA in San Luis Obispo County has two main zones. The eastern side has a hot and sunny climate with deep, rich soils producing plush, fruity wines with sweet ripe flavors. To the west, the cooling influence of the Pacific brings a zingy backbone to rich Zinfandel and Rhône favorites like Syrah and Viognier. Italian varietals like Sangiovese and Nebbiolo are also favorites of Paso Robles grape growers and wine drinkers.
