Winemaking The delicious potential of this harvest was evident with the first pressing as we gazed at our reflections in a richly colored, nearly opaque juice. Throughout a two-week-long fermentation, our winemakers monitored temperatures and skin contact closely, eager to withdraw every ounce of opulence. Prior to bottling, the wine rested for a generous time on oak before finally sealing the cork on what will be remembered as a stunning vintage for Washington Cabernet.

Vintage The 2018 vintage was as close to perfect as a vineyard manager could wish for. We enjoyed just short of ten idyllic weeks filled with warm, dry days, developing beautifully ripe grapes. These pristine conditions allowed us to choose the perfect time to pick without fear of overripening or bad weather, which resulted in an impeccable balance of rich fruit flavors and soft structure. The relaxed spirit of this stress-free year is palpable with each sip of our Cabernet Sauvignon.

Pairing Logic This Cabernet Sauvignon is a bold red wine lover’s dream. It has the depth and complexity to savor on its own or would serve as an excellent dinner companion. Rich red meats with salty soy sauce-based glazes and marinades will play into the wine’s savory notes while emphasizing dark fruit flavors. Vegetarian pairings should feature hearty textures to match Cabernet’s structure. Achieve this by using root vegetables and mushrooms or adding pasta or lentils to vegetable-based dishes.

Rattlesnake Hills

A small sub-region in the north of Yakima Valley, Rattlesnake Hills is a relatively new AVA. It has gained recognition for its finely balanced Riesling and Chardonnay and its structured Syrah, Cabernet Sauvignon and Malbec. The key is its hilly topography, with vineyards sitting at average elevations of 850 feet. The vines here enjoy better sun exposure and improved airflow than those in the valley below, helping the grapes stay healthy through the long growing season. With broad day and night temperature variations, wines from Rattlesnake Hills are increasingly in demand for their elegance.
