About This Wine

Holbrook Winery

Sauvignon Blanc

This exceptional wine is part of our Fine Wine Collection.

Winemaking Winemakers hand-harvest the fruit in the cool morning hours to preserve freshness and aromatic vibrancy. Most of the Sauvignon Blanc ferments slowly at low temperatures in stainless steel, capturing its vivid tropical and stone fruit character. To add texture and nuance, 10% is barrel-fermented in French oak, lending a soft roundness and delicate floral lift. A brief rest on fine lees enhances the wine’s silky mid-palate while maintaining its crisp, lively finish.

Vintage The 2024 vintage in Horse Heaven Hills was marked by cool morning temperatures that allowed for gentle, deliberate hand-harvesting at peak freshness. A long, temperate growing season gave the Sauvignon Blanc ample time to develop aromatic complexity while retaining vibrant acidity. Fermentation in stainless steel and a touch of French oak reflected the year’s balance between purity and depth. Brief lees aging in 2024 further enhanced the wine’s texture, echoing the vintage’s hallmark finesse and clarity.

Pairing Logic This rounded, perfumed Sauvignon Blanc complements dishes that echo its ripe fruit and floral delicacy. Pair with poached white fish, melon and prosciutto starters, or herbed couscous to elevate its peach and honeysuckle notes. Bright, citrus-accented sauces and a light touch of sea salt will draw out the wine’s mineral lift and refreshing acidity.

Wine Region

Horse Heaven Hills

Home to multiple 100 point wines, Horse Heaven Hills is nestled in the southeastern corner of Washington and is a hidden jewel amidst the vast landscape of the Pacific Northwest. Primarily known for reds, wines from the region are exciting and vibrant. Vineyards are planted along the banks of the Columbia River and on hillsides ranging from 300 feet to 1800 feet elevation. Despite the proximity to the river, the land is extremely dry. Heavy winds force grapes to work harder for nutrients and as a result, they develop highly concentrated fruit flavors.
