Cabernet Sauvignon

Every taste of our Four and Twenty Cabernet serenades you with perfumed herbaceous notes and piquant black fruit flavors. This Old World-style wine is a lighthearted soloist that diverges from the fruit-packed expectation of New World Cabernet Sauvignon. Its flavors focus instead on aromatic herbs and tertiary fruit. Washington's slightly cooler climate allows the fruit to sustain its fresh aromas and flavors. With these cooler temperatures, a long growing season is essential to ensure that the fruit is permitted enough "hang time" to reach peak ripeness. The dry climate of Columbia Valley allows for clusters of ripening grapes to remain on the vine long after the chirping birds have flown south for the winter. Harvesting in these chilly fall temperatures preserves the grape's acidity and freshness, contributing to the wine's Old World structure. Columbia Valley

Sheltered by the rain shadow of the Cascade Mountains, Columbia Valley is home to the majority of Washington's vineyards. Cool nights keep zippy acidity in the grapes, while long daylight hours give the fruit plenty of chance to ripen. This results in full-bodied Merlot, elegant Cabernet Sauvignon and deeply concentrated Syrah. White wines are just as tantalizing, with toasty oak-touched Chardonnay and ripe stone fruit-flavored Riesling taking the spotlight. Sub-AVAs to look out for are Yakima Valley and Walla Walla. The Columbia Valley is one of the only appellations in the United States to occupy vineyards in two states, as it crosses the Oregon border in the southern part of the valley.
