This Old World-style wine is a lighthearted soloist that diverges from the fruit-packed expectation of New World Cabernet Sauvignon. Its flavors focus instead on aromatic herbs and tertiary fruit. With these cooler temperatures, a long growing season is essential to ensure that the fruit is permitted enough "hang time" to reach peak ripeness.
