Winemaking maximizes these qualities by utilizing techniques that enhance the grape’s inherent fruit flavor rather than mask it, like using less oak influence than many popular Australian styles. This attention to detail and trust in nature is the key to capturing a classic Clare Valley Cabernet.

Vintage Clare Valley’s 2021 vintage was calm, cool and consistent. The growing season began with late winter and early spring rainstorms, followed by a long temperate summer. Sun-loving Cabernet grapes enjoyed warm days filled with generous sunshine before relaxing in cold evening temperatures. The serenity of a perfect growing season can be detected in each sip of this wine as refreshing aromas, ripe fruit flavors and tender textures present an exceptionally balanced profile.

Pairing Logic Though this is a softer expression of Cabernet Sauvignon, it is still a big wine. Vegetarian dishes should feature hearty root vegetables or starches to balance the wine’s boldness and harmonize with its earthy characteristics.
