Winemaking Harvesting by machine is quick, ensuring that all the grapes are at equal ripeness levels when they arrive at the winery. After sorting, the grapes are pressed, and fermentation takes place in stainless steel tanks at cool temperatures. This locks in freshness and focuses on fruit flavor, while a subtle French oak influence adds softness and a touch of spice to the flavor profile before bottling.

Vintage Throughout Côtes de Gascogne, the 2022 growing season was warm and dry. Apart from mid-summer hailstorms that reduced yields, it was a serene year for grapes in the French countryside. These Colombard vines are thirty years old and grow on south-facing hillsides. Little rain in the forecast meant grapes soaked up the sunshine, developing rich flavors and fullness during the day. Cool nighttime temperatures held onto naturally crisp acidity, balancing the wine’s texture and body.

Pairing Logic This Colombard is undoubtedly a food wine. Gascony’s renowned culinary reputation means the best pairings will be inspired by French farmhouse cooking. For protein dishes, select fatty slices of poultry or oily shellfish to give the wine’s bright acidity something to slice through. For vegetarian dishes, choose regional favorites like potatoes, wild mushrooms and grilled nuts. Côtes de Gascogne

Gascony is the ultimate expression of rural, southwestern France. Vineyards stretch from the peaks of the Pyrenees to the Atlantic Coast. Food and wine are significant parts of the culture here, where locals reliably have a bottle of "Côtes de Gascogne" on the table during meals. These are usually white blends featuring Ugni Blanc, Colombard and Sauvignon Blanc. They are typically light-bodied and dry with refreshing citrus and tropical fruit notes. Though red and rosé wines from this region are rare, those found are usually made from Merlot, Cabernet Sauvignon, Malbec and Tannat. IGP (Indication Géographique protégée) within France’s wine classification system focuses on controlling regional and geographical origin. The category is less restrictive than the AOC classification and gives winemakers to have more freedom with style and taste profile when creating wines.
