Winemaking Piekenierskloof winemaking favors absolute restraint and precision. Fermentation is carefully managed to protect fruit purity and avoid aggressive extraction, which can overwhelm the grape’s finer aromatics. Our cellar team employs gentle punch-downs and moderate fermentation temperatures to shape fine, textured tannins. The wine then undergoes maturation utilizing 30 percent new, highly toasted French oak barrels. This strategic oak regimen frames the dense mulberry core with rich accents of dark chocolate and mocha while ensuring the wine reflects place first, variety second, and cellar last.
Vintage Our Pinotage comes from the rugged, high-altitude slopes of the Piekenierskloof. Rooted deeply in ancient shale and sandstone-derived soils, these dry-farmed, low-vigour grapevines are naturally restricted in yield. The 2025 growing season experienced classic mountain conditions, featuring intense daytime sun countered by brisk mountain winds and high diurnal temperature swings. This slow, deliberate ripening phase allowed the grapes to accumulate rich fruit phenolics and mineral complexity without developing excessive, overripe sugars, preserving a beautiful natural tension in the fruit.
Pairing Logic This Pinotage delivers a compelling balance of bold power, dark berry richness and textured tannins. Its dark chocolate and mocha complexities allow it to pair spectacularly alongside wild game, earthy reductions and deeply savory stews. Pan-roasted duck breast with a sweet and tart cherry reduction elegantly highlights the wine's primary mulberry notes. For vegetarian pairings, a rich wild mushroom stroganoff or a hearty lentil and root vegetable stew mirrors the subtle savory, smoky coffee edges of the finish while perfectly integrating with the wine's structured frame.
