Cipresseto Rosata
Cipresseto was named for the cypress trees that dot the Tuscan landscape, underscoring its definitive Tuscan character while serving as a fitting title for one of Italy’s first rosés. This wine reflects Santa Cristina’s focus on the highest quality production at every step of the winemaking process. Scarce rainfall, sunshine and lots of heat characterize the 2015 growing season. Reserves of groundwater that collected in the soil during winter helped maintain regular vine growth. Meanwhile, heavy heat from mid-July through August drew out the ripening process to reach a late August to September harvesting period. The grapes, mainly Sangiovese with other complementary varieties, were gently destemmed, macerated, then pressed before cold settling to foster natural clarification. Fermented in stainless steel tanks, the wine remained in these tanks after fermentation to retain its crisp an ...
