A stable tannic structure and moderate acidity support notes of red and dark fruit. Why then, you ask, does this Cabernet come from such a rebellious brand? The answer lies in the region in which it was cultivated. Winemaking is one of the most tightly regulated industries. Regional laws often dictate the use of certain grape varieties, winemaking techniques, and aging requirements. In an industry governed by rules and tradition, South Australia chooses to nurture creativity and innovation. As with many New World regions, Australia has embraced a more “hands off” approach to wine law.
