Slope Cabernet Sauvignon
The goal of making long-lasting wine is lofty. It takes a combination of weather, the right vineyard sites, and a talented winemaker to produce a wine that can stand the test of time. Luckily, Immortal Slope has all three in their 2014 Cabernet. The year was dry, which left small berries with thick skins, but for long-lasting wines, that’s a good thing. The flavors are concentrated and benefited from gentle pressing, long time on the skins for a deep color and structure, and indigenous yeasts for the most terroir-driven nuances. It then rested in French oak barrels for over two years. The result is a delicious wine that can be enjoyed now or in decades.
