Cabernet Sauvignon
This Cabernet Sauvignon hails from the beautiful and vast Valle Central in Chile. The region is one of the largest wine-growing regions in the Southern Hemisphere, stretching almost 250 miles long. Fruit used for this wine was picked during the cooler parts of the night to keep temperatures low. After the pick, berries were cold soaked on the skins for 3-5 days which encouraged a soft and slow extraction of flavor and color. This is an approachable and friendly wine with rich, opulent texture and sweet dark fruit flavors. Soft tannins come forward on the back end. Easy to sip on its own or perfect to pair with meaty umami flavors like steak or mushrooms.
