Cabernet Sauvignon

This young and fresh Cabernet Sauvignon is the only Cabernet in the Daou portfolio made entirely of fruit sourced from local vineyards and regions. The 2018 Cabernet Sauvignon is made up of 78% Cabernet Sauvignon, 13% Merlot, 8% Petit Verdot, and 1% Cabernet Franc aged 11 months in 60% new French oak.

California's fastest-growing wine region is quickly gaining an international reputation for its innovative and boundary-breaking wines. Located halfway between LA and San Francisco, the Paso Robles AVA in San Luis Obispo County has two main zones. The eastern side has a hot and sunny climate with deep, rich soils producing plush, fruity wines with sweet ripe flavors. To the west, the cooling influence of the Pacific brings a zingy backbone to rich Zinfandel and Rhône favorites like Syrah and Viognier. Italian varietals like Sangiovese and Nebbiolo are also favorites of Paso Robles grape growers and wine drinkers.

TASTING NOTES:

Black Cherry

Rich and sophisticated on the nose with currant, black cherry, cedar, and eucalyptus. Excellent structure and harmony between the pure fruit core and firm, supple backbone of polished tannins. The finish is surprisingly elegant for a wine of such power. Silky and smooth, ending on lovely notes of sweet cherry and boysenberry.

FROM THE WINERY: The most beautiful expression of wine comes from terroir. In simplest terms, terroir is soil and climate. Great wines require exceptional terroir. DAOU Mountain is created from a very rare soil, calcareous clay. This soil, famously found in Saint-Émilion and the right bank of Bordeaux, is composed of clay with a calcareous and limestone subsoil perfect for growing Cabernet Sauvignon and Bordeaux varieties. DAOU Mountain rises 2,200 feet in elevation in the hills of the Adelaida District on the west side of the Paso Robles AVA. With its steep mountain slopes of up to fifty-six percent, DAOU Mountain rises dramatically above the Coastal Range with breathtaking views from the highest winery on the Central Coast of California. The mountain is cooled by the Pacific Ocean, fourteen miles away, and gentle breezes that flow over the Templeton Gap. Warm, temperate days and cool nights guarantee even ripening and vine balance every year.
