One of our favorite pairing tips is to think about what food is served in the place the wine comes from. This is especially easy if you are drinking an Old World wine. French wines pair very naturally with French food, Spanish wines are an easy accompaniment to tapas, and in the case of the Castello Speccio, it’s a perfect partner to fresh Mediterranean fare. The wine is a beautiful blend of Cataratto and Chardonnay that has bright, fresh notes of Mediterranean spices, citrus, and stony, mineral notes. We have loved pairing this with fresh seafood grilled in olive oil, salads with capers, and fresh vegetables. Judges love it too. Italy's Terre Siciliane covers wines made across the island of Sicily—including its satellite islands of Salina, Pantelleria and Stromboli. The wines can be still or sparkling, red, white or rosé, dry or sweet, and made from such grape varieties as Sangiovese, Catarratto and Vermentino. Whatever the style, Terre Siciliane wines benefit from the natural features of this southern Italian region. Sicily's abundant sunshine, mineral-rich soils, coastal breezes and drying African winds help it produce exceptional grapes that transfer into wines of character and expression. The IGT (Indicazione Geografica Tipica) classification system was created to provide more freedom and ease for winemaking within Italy. Wines under the IGT classification are regulated on the region of origin—where within the country grapes are grown—instead of varietals or wine styles as DOC and DOCG laws focus on.
