ABOUT THIS WINE:

Wave Hill Council

Wave Hill Council

Shiraz

No wine is more classically Australian than Shiraz, and this is one of the best. Harvested at perfect ripeness it is full of blue fruit, well-balanced alcohol, and a perfect acidity. You know it’s Shiraz in its most delicate form when the secondary notes of black pepper and oregano creep onto your palate. The finish has oak spices with hints of vanilla and milk chocolate. The round mouthfeel and beautiful acidity make this an excellent wine for pairing. Our experts think that it works excellently with foods that have more texture, in particular, duck breast, wild game, or a grilled sausage. Judges love it too! It took home a gold medal and was name the "Best of Australia" at the 2018 Harvest Challenge.

WINE REGION:

Outline of Australia

Australia

The Land Down Under is famous for taking well-known European grapes and giving them a new personality. From bold, jammy Shiraz to creamy oak-tinged Chardonnay, herbaceous Sémillon to distinctively citrusy Riesling, when it comes to quality, Australian wine can be breathtaking. This is thanks to its variety of climates and terroirs. Australia is roughly the same size as the continental United States, with temperatures ranging from searingly hot to moderately cool. The best regions have warm days and cool nights, tempered by breezes from the Southern and Indian Oceans.

This wine has beautiful blue fruits, bold style, and is spicy with a plush structure and a refreshing vein of acidity. It is a more restrained style yet fruity, round, and soft. The bold flavors and rich acidity make this an excellent pairing for meats cooked on the rarer side.

ABOUT THE BRAND:

large bunches of red grapes on the vine

Wave Hill Council

In the Northern Territory of Australia, Wave Hill is the famous site where the Wave Hill walk-off took place in 1966. During this peaceful protest, the region’s aboriginal stockmen and domestic workers went on strike, demanding the return of the area’s native lands to the indigenous Gurindji people and improved working conditions. This strike ended after seven years when the local government finally agreed to their terms, making this event the first major victory of the fight for Aboriginal land rights in Australia. At Wave Hill Council, we salute the tenacity, passion and grit of these origins. Each of our wines is bold and full of life, having been crafted with history in mind and with respect for those who got us where we are today.
