Located in northeastern Hungary, hilly Tokaj has a warm climate with volcanic-clay soils, and sits at the confluence of two rivers. While the soils of Tokaj allow winemakers to craft mineral-rich dry whites from the Furmint grape, with its two rivers and long, balmy autumns, Tokaj vineyards also have the ability to develop botrytis, or "noble rot."
