The state's American Viticultural Areas (AVAs) benefit from the high altitude and the intense sunlight, which together create a significant diurnal temperature variation. This variation sharply cools the vineyards at night, tempering the daytime heat and allowing grapes to ripen slowly and develop complex flavors while retaining essential acids. The arid climate and minimal rainfall reduce the risk of vine diseases and allow vintners to control vine vigor through irrigation. Vineyards at lower elevations tend to produce bolder, more intense wines, while those at higher elevations excel in growing cooler-climate varieties, yielding more delicate and aromatic wines.
