Home to the lusciously sweet and long-aging Tokaji Aszú dessert wine, the Tokaj region is becoming equally well known today for its high-quality dry whites. Located in northeastern Hungary, hilly Tokaj has a warm climate with volcanic-clay soils, and sits at the confluence of two rivers. While the soils of Tokaj allow winemakers to craft mineral-rich dry whites from the Furmint grape, with its two rivers and long, balmy autumns, Tokaj vineyards also have the ability to develop botrytis, or "noble rot." This unique fungus is the key to great sweet wines, as it concentrates sugars and brings about a sublime honeyed character.
